Thanksgiving-Leftover-Stuffed Peppers

Thanksgiving leftovers? 

Um, Erin, how do you still have any Thanksgiving leftovers?

I know it's what you're all thinking. That's ok though. You're not alone!

As the days until we leave tick away more and more quickly, the to do list seems to grow. In direct proportion to the amount of food we've got to get rid of. So it seems.

Time to get creative!

This is another great hubby creation, though we thought it up together. Also (thank goodness!) we didn't have quite enough leftovers to make the stuffing for the peppers, so we augmented with some ground beef. 


Thanksgiving-Leftover-Stuffed Peppers

(all measurements approximate)
1-2 pounds leftover turkey meat
3/4 pound ground beef
2.5 cups stuffing
3 potatoes, boiled and diced into 1" cubes
1/2 cup sour cream
1 egg
1 tsp minced dried onion
1-2 dashes each: salt, pepper, chili powder, garlic salt, celery salt, cayenne pepper, oregano
5-6 peppers, scooped out

Add all ingredients except peppers into a food processor and mix together using the dough blade until well-blended. Stuff into peppers. Bake at 350 degrees for 20 minutes. Serve with sour cream and a Ceasar salad. Yum!
