Baby steps. I've decided not to purchase Doritos again (we'll see how that works), but I can make Cool Ranch Popcorn, which is almost as tasty and mountains better for you!
I love popcorn experiments, and also have a cheesy bbq recipe, which by definition, is oh so good, and by reality, amazing! I'll share that recipe soon, since popcorn occurs in our household several times a week.
I did some googling and found this fantastic recipe for Cool Ranch popcorn, but of course made some modifications to achieve the flavor and coloring of my beloved Doritos. Just kidding on the coloring... I did NOT (emphatically) turn the popcorn the color of corn chips.
My recipe calls for making popcorn in a pan... I hate the microwaved stuff and we don't have an air popper. If you must go for microwaved, just don't tell me, and get the plainest stuff you can. If you use an air popper, you may want to spritz the popped corn with water from a spray bottle or melt some butter and drizzle over to help the mix stick to the kernels.
Here's my take on "Cool Ranch" Popcorn
1 tbsp buttermilk powder, heaping
1 tsp onion powder
1 tsp garlic salt
1/2 tsp chili powder (paprika would work too as this is mainly for color)
1/2 cup popcorn
2-3 tbsp vegetable oil (note, if you use an air popper,
Place the oil and unpopped kernels in a saucepan that you don't care about. (If this is to become your popcorn pan, it will soon be black from the oil, when you make popcorn like this 3-4x a week.) Heat over high heat and cover.
While kernels are sizzling away, mix all other ingredients together in a small bowl.
Once popcorn has popped and you've placed in the popcorn bowl, (K is the chief popcorn maker in our house, as he has discovered secrets to popping nearly every kernel in the pan, whereas mine always has lots of old maids), spoon the dry mixture over the popcorn, shaking the contents of the bowl between spoonfuls. Shake more, and serve!!
