Awesome use of what was left - I love stuffed peppers - I think this would have been scrumptious and I bet the added beef gave it just enough different flavor that it felt on purpose insead of a leftover dish. Thanks for sharing your creativity at the Hearth and Soul Hop. Sorry I haven't linked up to the Friday Potluck in awhile - it is CRAZY at my house right now.

I love stuffed pepper and that's a great recipe. I love the spices you used. I make stuffed peppers frequently but I cut mine in half, stem to bottom, and the stuffing cooks up so nice and browned that way.
